We settled on soft benches, in the back of the room, in a cozy half-closed room, ideal for a leisurely and satisfying dinner in the company of family or friends. Soon, summer refreshing cucumber drinks appeared on our table, and after them came aperitifs in the form of eggplant caviar, yogurt with tomatoes and olive paste, decorated with a crispy and golden beam - of course, so that we could wake up a wolf appetite. You have no doubt that the dishes very soon had to be updated.

The culmination of the evening was a traditional Iranian kebab - an assortment of chicken, beef, ground beef and lamb ribs, perfectly marinated in yogurt and cooked, as the custom says, on coals. The aroma is unique, simply divine, you can not confuse it with anything. And there is no doubt that while we were saturated with the most tender meat, it was he who attracted dozens of curious and suffering people here. Like many eastern nations, Iranians eat with their hands. And to lick your fingers is the best praise to the cook. However, as you like.

Having coped with the hot dishes, we proceeded to sweet treats: we chose "jalebi" as a sample - cookies in the form of spirals, fried in butter and densely sprinkled with sugar syrup. Very sweet, very satisfying and very oriental ... Needless to say, Persian hospitality, generous portions and dishes prepared with real passion literally struck us on the spot!

IRANIAN GRILL-ASSORTED

Especially for our dear readers, chef Magsut Narimanzadeh shared the secret of the culinary delights of traditional Iranian cuisine.

Ingredients:

  • 400 g basmati rice
  • 200 g unpeeled king prawns
  • 200 g chicken legs
  • 200 g lamb meat
  • 1/3 cup yogurt
  • 30 ml of lemon juice
  • ½ g saffron
  • 150 g of fodder beans
  • 200 g onion
  • Salt and pepper to taste

Cooking method

  • Make a marinade of yogurt, lemon juice, spices and onions. Leave the meat to marinate overnight.
  • String meat on skewers and put on charcoal.
  • Boil water and add basmati rice and saffron to it.
  • Serve meat with basmati and bagali rice, with yogurt and fresh vegetables.
